The buds of the caper plant are collected before they bloom and kept in a kind of brine in salt water and used in various areas in the kitchen.

It is especially used in tuna fish or mixed seafood pizzas. In addition to the food industry, it is also used in the pharmaceutical, paint and cosmetics industries. For this reason, the Spaniards declared the caper as a national plant and took it under protection.

How to Make Caper Jam?

What should you do when making caper jam or consuming this plant in different areas in the kitchen? The smaller the capers you choose, the more delicious the result will be. Before you start making caper jam, you should soak the capers in cold water for a week. During this week, it is necessary to drain the water of the capers and freshen them with cold water every day. At the end of this period, filter the capers kept in a cold water bath and keep them in slaked lime for 1 hour. Then wash it, strain the water, put it in the pot and start mixing by adding one-to-one granulated sugar.
