Ingredients for Mushroom Salad
- 400 grams of small mushrooms
- 1 carrot
- 1 small red pepper
- 4 tablespoons of olive oil
- 2 tablespoons of pine nuts
- 2 tablespoons of currants
- 100 grams aged cheddar cheese
- 2-3 sprigs of dill
- Salt, pepper
Mushroom Salad Recipe
Divide the mushrooms into four. Clean the carrot and cut it into small cubes. Finely chop the pepper. Take 2 tablespoons of olive oil in a pan and heat it. Add the mushrooms and fry until they release their juices and remove from the pan. Put the remaining oil in the pan and sauté the carrot for a few minutes. Add the pepper to it. After two minutes, remove from the stove, add to the mushrooms and leave to cool. Roast the pine nuts in a non-stick frying pan until they turn brown. Soak the currants in warm water for 15 minutes and drain. Cut the cheddar cheese into small cubes. Add pine nuts, currants, cheese, salt and pepper to the cooled mushroom mixture and mix. Then divide into small containers. Serve garnished with dill. Enjoy your meal.
